August Recipe: Quinoa Veggie Burgers


Each month we feature a new recipe from Kelli Dunn, a fellow Finish Line PT patient, triathlete and author of The Corner Kitchen Blog, which focuses on finding balance between clean eating and indulging your sweet tooth.

August Recipe of the Month: Quinoa Veggie Burgers

There are 3 crucial components to a great veggie burger: it must be full of fresh veggies (not filler), it must be full of flavor, and it must stay together until the very last bite! This (gluten free) veggie burger combines cooked quinoa, black beans, sweet summer corn, red pepper, carrots and fresh cilantro. It’s a meaty, nutritious protein-packed patty that stays together until the very end. For extra flavor, top your burgers with leafy greens, avocado, sliced tomato and a spread of whipped feta.
