October Recipe: Roasted Butternut Squash Soup

October Recipe of the Month: Roasted Butternut Squash Soup

The weather is finally starting to turn cool, and nothing is better to warm you up than a bowl of hearty & healthy Roasted Butternut Squash Soup. This is a nice thick, creamy soup… but creamy, without the cream. A butternut squash soup flavored with warm spices and a hint of tart apple = a no-brainer.

Use sour cream or Greek yogurt to create a spiderweb garnish for a fun Halloween lunch or dinner (looks hard – but it’s actually quite simple!).
