Healthy Recipes from the Corner Kitchen Blog


Hi Finish Line friends! I’m Kelli, a fellow Finish Line PT patient, triathlete and author of The Corner Kitchen Blog, a cooking blog focused on finding balance between clean eating and indulging my sweet tooth. I’m excited to begin a new collaboration with the FLPT community in which I’ll be sharing a new recipe with you every month. If there’s a particular type of recipe you’d like to see featured, let me know. I’d love to hear from you!

Today I’m kicking things off with one of my favorite morning meals, my Oatmeal & Quinoa Breakfast Bowl. If you’ve never had quinoa for breakfast, it’s time to give it a try. Quinoa is a complete protein (meaning, it has all essential amino acids) and is a good source of fiber, magnesium, iron and calcium. When cooked it has a light & fluffy texture with a slightly nutty taste. I recently started jazzing up my regular morning oats with some protein-packed quinoa, golden raisins and dried cranberries. This Oatmeal and Quinoa Breakfast Bowl is a delicious (vegan & dairy-free!) meal to get your day started on the right foot.
